Banana “Ice Cream”

Okay…hold the cream and check out this amazing alternative to ice cream that is WAY more health promoting and nutritious than real ice cream. This recipe is super easy and is the perfect icy treat for the summer.

Ingredients:

Frozen Bananas (2 per person)

Cinnamon toasted almonds

Sprinkle of Chia seeds

Chocolate chips (to taste)

 

Method:

Place frozen bananas into a blender or food processor. Add a little bit of water and if you’re having trouble blending it, add a bit more. Be mindful not to overdue the water or your banana ice cream will be too thin.

 

Blend the frozen bananas until creamy. Scoop out, place into bowl and top with toppings. Try putting it on a cone too!

 

Cinnamon toasted almonds + walnuts

Heat a small pan on medium heat. Once warm, add the walnuts and almonds stirring every 10-15 seconds or so, making sure they don’t burn. Once they are fragrant and starting to brown, sprinkle them with cinnamon, toss a few times and let cook 10 more seconds. Take off the heat, once cooled, chop them up. *If you overcook the cinnamon, it will burn and turn black—so if that happens…that why.

 

Bananas are an excellent source of fiber and potassium, a mineral that helps regulate blood pressure. The riper they are, the sweeter they are. When frozen and blended, they become very creamy. I always have frozen bananas on hand all year round because I also like to add them to my smoothies too.

 

Chia seeds are known for their protein, fiber and Omega 3 fatty acids. Omega 3’s are anti-inflammatory and we need more of them in our diet. We get tons of Omega 6 fatty acids, which are pro-inflammatory. The ideal ratio of Omega 6 to Omega 3 should be 3:1; the typical person has a 16:1 ratio. Other great plant sources of Omega 3: Flax (the best!) and walnuts. We’ll talk more about this at our next healthy eating workshop!

 

TIP:

When freezing bananas, TAKE THEM OUT OF THE PEEL FIRST. This is so important! If you freeze them in the peel, they are impossible to get out! You can buy frozen bananas but I personally think that’s a waste of money :) Place them in a freezer friendly bag or glass container and use as needed.
