For many of us breakfast is one of the most important meals of the day, and especially if you are someone who wakes up hungry after 8 hours of sleep and no food. While getting in some fuel before we workout or head to work is key to a successful day and great workout, making a nutritious and satisfying breakfast isn't always easy when you are short on time. So Angela, our Knockout and nutritionist, has a great breakfast recipe that is tasty and convenient.
Banana & Blueberry Overnight Oatmeal
3 cups rolled oats
3 cups unsweetened vanilla almond milk (or liquid of your choice)
1 small container of blueberries1 banana mashed (mash it to liquid!)
½ teaspoon cinnamon
Mix all ingredients together and store in the refrigerator overnight. Enjoy cold or warm (I LOVE this cold, very refreshing!) **If you are in a pinch, this oatmeal will come together in an hour!
8 oz sliced almonds
8 oz walnut pieces
Sprinkle of cinnamon (to taste)
Drizzle of honey (to taste)
Warm up a medium seized sauté pan. Once the pan is warm, toss the almonds and walnuts in. Let them dry toast in the pan, moving them around every 10 seconds or so to prevent them from burning. Once they become fragrant and slightly browned, sprinkle in cinnamon and honey. Toss to coat and let toast for another minute, stirring every 10 seconds. Take off the heat, let sit for at least 10 minutes. Sprinkle on top of oatmeal and enjoy! These will keep best at room temperature in an air tight container. Before storing them, make sure they are completely cooled or they will become soggy.
